I should start by saying that I'm not really a big fan of pie. I mean, it's OK, but I'm really picky with crust so a lot of it depends on the filling. However, this is one pie that I've always loved, crust and all. I can't take credit for it, though. There's an apple orchard near my parents that makes spectacular pie so I don't even bother trying to make my own: I just go there and buy it. The problem with that is that they're only open for a few months in the fall. It appears that they sell frozen pies, though, so I may have to stock up.
When we go to the Big E in Springfield, the Vermont building has apple pie (which doesn't hold a candle to this one), but they serve it with a slice of cheddar cheese. mmm what a yummy combination. Ahh sweet, tender apple pie with sharp cheddar cheese. So since we happen to have some cheddar, why not?
