Nestle's Mint Chocolate Delights


I know I've been terrible and haven't posted much lately, but frankly I haven't been baking much. There's not much time, and there's less than 5 weeks until our baby makes her arrival so I've been busy with other things. Anyway, today is a snow day so I figured I'd make some yummy cookies to enjoy while we're snowed in. I found a bag of Nestle Dark Chocolate & Mint morsels in the pantry with a recipe for Mint Chocolate Delights on the back so I was in luck! And I really was in luck because they're quite yummy, too :)



Usually cookie dough tends to be a bit sticky for me so I have trouble getting nice round cookies, but this batter is a little drier, maybe because of the cocoa powder, so I was able to shape them a little better.

Mint Chocolate Delights
adapted from Nestle

2 cups all-purpose flour
2/3 cup baking cocoa
1 tsp. baking soda
1/2 tsp. salt
2 sticks softened butter
2/3 cup granulated sugar
2/3 cup packed brown sugar
1 tsp. vanilla
2 large eggs
1 package Dark Chocolate & Mint morsels

Preheat oven to 325F
Combine flour, cocoa, baking soda and salt in a bowl. Cream butter, sugars, and vanilla extract in a large bowl. Add eggs one at a time, mixing well after each addition. Mix in the dry ingredients a little at a time. Stir in morsels. Drop dough by rounded tablespoon full onto a cookie sheet (or roll into balls and flatten slightly if you can)
Bake 11 to 13 minutes or until the cookies puff and the centers are set. Cool on baking sheet for 2 minutes then remove to a cooling rack. Makes around 4 dozen cookies. Enjoy!
