Banana Bread


I had a few bananas that were past their prime for eating so I just had to make banana bread. OK so maybe I let them sit too long just so I could make it but shh... This is one quick bread recipe I will make whenever I can. Unfortunately, my husband doesn't like bananas so two loaves it a bit much for us. Fortunately, it freezes well. This time, I'm going to give a loaf to my brother since I'm lucky enough to see him this weekend. I got this recipe from my mom who may have found it on the back of a walnut bag.


Banana Bread

Preheat oven to 350F

makes 2 loaves

1/2 cup butter, softened
1 cup sugar
2 eggs
3 ripe bananas
2 cups flour
1 tsp baking soda
3 Tbsp milk
1 cup chopped walnuts (optional)

- Cream together butter and sugar.
- Add eggs and bananas. Mix (using an electric mixer) until bananas are well mashed.
- Add flour, milk, and baking soda. Blend thoroughly, but do not over mix.
- Fold in nuts, optional.
- Pour batter into 2 greased and floured loaf pans (8 1/2" x 4 1/2" x 2"). Bake for 45 minutes. Check for doneness with a toothpick inserted in center of loaves. Remove baked loaves from pan to cool.

Note: If you use a larger loaf pan, check the breads after 35-40 minutes.
