Granola Cookies

I was reading David Lebovitz' post about making Amnesy Cookies, and my interest was piqued because we have a box of granola that Mike doesn't like yet refuses to throw away. I figured why not try to use an oatmeal cookie recipe and just substitute some granola, sunflower seeds, peanuts, and coconut.

I don't really like making cookies because I'm usually disappointed in them since they often come out flat. Well these did regardless of baking right after mixing or chilling the batter first. Oh well, at least they taste good. I don't really like crispy cookies either, but the granola gave them a nice chewiness, too. Funnily enough, Mike didn't like the granola because it was chewy. Well it worked out for me!

Well, here they are, my paper-thin granola cookies:


I adapted the Vanishing Oatmeal Raisin Cookies recipe from under the cap on the Quaker Oats jar. This is my adapted version without the oats or the raisins. haha


Preheat oven to 350F

1/2 pound (2 sticks) butter
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
1-1/2 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 -1/4 cups granola
3/4 cup mixed sunflower seeds, shredded coconut, and peanuts

- Beat together butter and sugars until creamy.
- Add eggs and vanilla; beat well
- Add combined flour, baking soda, cinnamon, and salt; mix well
- Stir in granola, seeds, coconut, and peanuts.
- Drop by rounded tablespoonfuls onto ungreased cookie sheet.
- Bake 10 to 12 minutes or until golden brown. (getting really frustrated while adding time because the cookies aren't even close to brown after 12 minutes) Add more time...though this could be because I use Airbake pans...
- Cool 1 minute on cookie sheet; remove to wire rack.
