Mike and I went to the grocery store yesterday, and he spotted beets and decided we were going to have them for dinner. Well, neither of us had actually made beets other than opening the can, but I must say, after last night's trial, we will definitely be making them again. We picked up a nice piece of salmon and some asparagus, too.
Well, I cut off the greens and set them aside as Mike was determined to use them, too. I really like when we make dinners together, by the way.

I tried this recipe for roasted beets, but they didn't get tender after a half hour. I needed to increase the temperature for the salmon anyway, so I just left them in to cook longer aside the salmon. I just put the salmon in folded foil with some sliced lemon.

Since it was too rainy and cold for the grill, I put the asparagus into a skillet with some Newman's Own light balsamic vinaigrette and just tossed them at medium heat until cooked through.
Mike took care of the beet greens by cooking one slice of bacon in a skillet then adding some diced onion then added the beet greens to the pan to wilt. It smelled so good in our kitchen. yum! I just microwaved a little bag of jasmine rice to go with it all, and this is what we ended up with:

Definitely something we'll try again. The beets are nice and sweet and slightly caramelized, and the greens were really flavorful with the bacon and onions. Yep, big fans of this one.
