Well St. Patrick's Day was a week and a half ago so we went out and bought some Guinness...and didn't even open the case. I've been wanting to make a chocolate cake with Guinness for a while now, and wince we don't do much drinking, I didn't think Mike would miss one can. I decided to go with the easy route and use boxed cake mix instead of making it from scratch. I was tight on time and really wanted some cake. I'm pretty pleased with how it turned out, though. There really is a distinct Guinness flavor to the cake. I would have liked to make a ganache, but since I didn't have the ingredients or time, I served it plain. Maybe next time...


Guinness Stout Chocolate Cake
1 box Betty Crocker Devil's Food Cake
1-1/3 cups Guinness Stout
1/2 cup vegetable oil
3 eggs
Prepare as directed on the box only substitute Guinness for the water. Instead of greasing and flouring my pan, I greased the pan then used cocoa powder instead of flour. It keeps the pan looking chocolaty instead of having a white hue. I made mine in a bundt pan and baked it for 42 minutes exactly. Slainte!
